A few weeks ago I went along to a "Be a Protege for a Day" cooking class at
Theo Randall's restaurant at the Intercontinental in London. It was fantastic! Myself and a small group of food lovers were shown how to create some beautiful Italian dishes. Pasta and risotto are quite simple dishes, you might think, but it's amazing how just being taught a few tips and tricks (not using a colander to drain pasta, for example) can absolutely lift the dish. I have not made risotto
the lazy way ever since.
