gluten free blogger challenge: day 3 sum up
Today has been a rather enlightening day! First, the eats:
Breakfast: It was the same as yesterday, as I didn't eat the entire can of baked beans yesterday. Good old beans on toast, can't beat it really. Also accompanied by coffee.
Lunch: Baked sweet potato with hummus, salad, raw broccoli, spring onion, yellow pepper, coriander and a bit of chilli. YUM.
Snack: (not pictured) 2 rice cakes with hummus. Peach green tea.
Dinner: Baked tofu with tamari (gluten free soy sauce), black sesame seeds, chilli and garlic, served with steamed basmati rice and green vegetables. Very similar to my best ever tofu recipe a few weeks ago.
Dessert: A bit of TOTAL 0% with sliced nectarine, blueberries, a few strawberries and a smattering of Organic Seed & Bean Lemon and Poppyseed white chocolate.
Now I'm about to have a herbal tea and head off to bed!
Day 3 highlight: Lunch was absolutely gorgeous. After years of avoiding spring onions because I was paranoid they gave me bad breath, I've been having them in salads lately and I have had no reports of unfavourable breath :) I also really enjoyed dessert.
Day 3 challenge: More crumbled bread at breakfast despite my best efforts. Meh. Dinner was a tad overcooked but still delicious! :P
Day 3 sum up: Today I felt really really good. Like I said in the video, it feels like I've been on a detox, for want of a better word. Everything just feels cleaner, I feel like I'm digesting things better. And I'm not eating anything I wouldn't normally eat either, this has all been surprisingly easy!! I'm just thinking about everything a bit more, still checking labels (for example, the dark chocolate I had in my treat box could not guarantee it was gluten free, but the white chocolate was labelled as gluten free...interesting!) and because all the processed stuff in my diet has been cut out, I'm primarily eating whole foods, lots of vegetables and less heavy but still satisfying grains....so no wonder I feel fantastic :) My occasional feelings of being bloated and various digestive issues all seem to have disappeared too.
Today has been the first day where I've thought wow, I think I could do this for a lot longer than 5 days.
Bring on Day 4!! :D
If you've ever excluded gluten (or anything else) from your diet, how long did it take you to notice the difference?
