I hope you enjoyed my little video sum up of how Day 2 went! Here's the little food what I ate segment as well:
Breakfast: Gluten free bread (toasted) with baked beans. You might also note my soy latte there in my favourite mug ;)
I didn't consciously arrange it like a heart, but a few people on Instagram noticed and I think it's rather cute!
Gluten free bread, as I said in the video, is so delicate and breaks very easily. Even a rough pop up on the toaster can rupture it! But despite needing to be less slapdash in the kitchen (not really my style!) I like the taste and texture of the bread when toasted.
Lunch: I emerged from my writing cave and assembled a plate of snackages :)
I am absolutely loving rice cakes at the moment. I like them plain but hummus on top takes the deliciousness to another level!
Dinner: no photo but it was leftovers of the artichoke and asparagus spaghetti that I had on Monday, as I was on my own. I added some more green beans and strips of courgette to bulk it out a little. Also added a bit of boiling water and garlic olive oil to refresh the pasta itself. Very nice. Had a glass of white wine with it.
Dessert: a row of dark chocolate.
Hubby, on the other hand, had Pizza Hut Gut when he returned from his evening out with the boys. Pizza Hut Gut is a term my sister and I coined when she and her fiance came to stay with us a few years ago, and Tom and Drew indulged in some Pizza Hut one night and both were rather uncomfortable the next day! Tom has been eating gluten free with me and last night was his first slip back, and he felt the effects! I felt rather smug with my gluten free, non-bloated evening ;)
Day 2 highlight: I really enjoyed breakfast. I think the birds enjoyed their gluten free breakfast too (I couldn't waste the broken bits of bread!).
Day 2 challenge: Resisting beer. I'm glad there was wine! Ha ha! I will be seeking out gluten free beer in the next day or so.
Day 2 sum up: I feel so....light. I really noticed the absence of wanting to snack mindlessly like I sometimes do. All the meals completely satisfied me. It was a good day.
